Few people realize that hawthorn berries are edible. Though if you eat one they're not particularly appetizing (indeed, they're quite boring). The truth is that most of the flavour is in the skin.
This
British recipe is for a classic hawthorn berry stew which can be used as a sauce for wild game or even for ice cream or custard.
Ingredients:
500g
hawthorn berries with stalks removed
200g sugar (more if you like)
2
cinnamon sticks
pinch of
chilli flakes (if you're making a savoury sauce)
Method:
Add the hawthorn berries to a pot along with 120ml water. Bring to a gentle simmer, cover the pot tightly and allow to cook for about half an hour. Allow to cool, then pass through a sieve with the back of a spoon (this will remove the seeds). Transfer the resultant sauce to a pan, add the sugar, cinnamon sticks and chilli flakes (if using). Cook until the sauce thickens sufficiently and serve.
Personally, I like this over ice cream, where the chilli heat of the sauce contrasts well with the cold of the ice cream. The combination with vanilla ice cream is particularly good. This is a versatile sauce and can be used with game meat and red meat.
