Hashed Potatoes: An Irish recipe for a classic fried blend of potatoes with cheese and spiced yoghurt served as an accompaniment or vegetarian light supper.
Cut the potatoes into chunks, place in a pan, cover with cold water and bring to a boil. Cook for about 18 minutes, or until tender then drain and roughly mash.
Melt 15g of the butter in a large non-stick frying pan. Add the onion and the herbs and fry for 10 minutes, or until the onion is golden brown.
In a bowl, mix together the yoghurt, cheese, mustard and Worcestershire sauce. Add the mashed potatoes to the frying pan, then stir in the yoghurt mixture. Mix to combine then flatten the mixture out to the sides of the pan.
Cook over high heat for about 6 minutes, or until golden brown underneath. Using a spatula turn the hash, a little at a time, and brown on the other side.
