Harvest Soup

Ingredients:

2.2l water
1 large onion, chopped
2 large cloves garlic, minced
2 celery sticks, chopped
400g squash, cubed
1 small cauliflower
4 medium carrots, sliced
4 medium courgettes (zucchini), sliced
3 medium white potatoes, sliced
1 small head cabbage, sliced thin
1/2 tsp dried thyme
1/2 tsp dried basil
2 vegetable bouillon cubes
1 tsp sea salt
pinch of nutmeg
2 tbsp fresh lemon juice

Method:

In heavy-bottomed pan bring water to boil. Add all the ingredients except lemon juice, bring to a simmer and cook for 30 minutes, stirring frequently to break up squash and form thick a stock. Continue cooking until all the vegetables are thoroughly cooked through then stir-in the lemon juice at very end of cooking. Serve immediately.

This is great for using-up any leftovers you may have.
