Assaisonnement Vert (Guianan Green Seasoning)

Assaisonnement Vert (Guianan Green Seasoning) is a traditional French Guianan (Guyane) recipe for the local version of the green seasoning blend that is ubiquitous throughout the Caribbean. Method:

Rinse the peppers, green onions, and green herbs. Remove the stems from the chillies. If using Cubanelle peppers, remove the stems and seeds. Coarsely chop the spring onions. Remove the leaves from the woody parts of the thyme sprigs. You can leave the tender parts of the stems intact.

Add everything to a food processor and pulse to chop. This may need to be done in two batches. Add half of the ingredients to the food processor and pulse to chop then puree on high speed for a few seconds. Open the lid, then scrape down the sides with a small spatula or spoon. Replace the lid and pulse until the seasoning resembles a paste or thick marinade. Repeat with the other half of the ingredients.

Mix the two batches together in a bowl. Store your green seasoning in a glass jar with a tight-fitting lid then store in the refrigerator.

To freeze, fill the wells of an ice cube tray with spoonfuls of seasoning. Cover with a lid. If you don't have a matching lid for your tray, wrap the top with clingfilm (plastic wrap) to prevent freezer burn. Once frozen, remove each portion and place it in a freezer bag.

The green seasoning will keep fresh for up to 2 weeks in the refrigerator and up to 6 months in the freezer.
