Guyana Pressure-cooker Mango Sour

I couldn't present a list of Guyanese recipes without including Mango Sour which is Guyana's condiment par excellence. It's served with everything, including all the common street food, it's part of breakfast (especially served with black and white puddings) and it accompanied breads and bakes as a snack and curries and stews as a condiment.

Ingredients:

2 Mangos (firm and green), peeled and with flesh cut from the seed
2 wiri wiri chillies or similar hot chilli pepper
1 tsp of salt
1 small onion, diced
4-6 garlic cloves, chopped
1/2 tsp of cumin, toasted and ground
4 tbsp of lime juice

Method:

Combine all the ingredients in an electric of stove-top pressure cooker. Mix together then seal the lid and pressure cook for about 10 minutes.

Allow to cool naturally then open the pressure cooker and using a fork, crush the mango flesh, garlic, pepper and onions, then mix together well to combine.

Allow to cool completely then enjoy an an accompaniment or dip with your favourite snacks
