Gunpowder Plot Toffees

Gunpowder Plot Toffees is a traditional British recipe for a classic sugar, butter, treacle (molasses), malt vinegar and milk toffee made by boiling these ingredients together until caramelized and thick and which makes an excellent treat for Bonfire night. Ingredients:

500g unrefined cane sugar
120g butter
120g treacle
1 tbsp malt vinegar
1 tbsp water
1 tbsp milk

Method:

Combine all the ingredients (except the vinegar) in a saucepan and bring to a boil, stirring constantly. Continue boiling gently for between 15 and 20 minutes, still stirring constantly, until a drop of the mixture becomes brittle when dropped in a bowl of cold water (the Hard Crack Stage).

Take the pan off the heat and stir in the vinegar. Immediately pour the mixture into a shallow tin that has been thoroughly greased. Set aside to cool and when the toffee has nearly set score deeply with an oiled knife into bite-sized squares.

When cold, cut into squares and store in an air-tight jar in a cool place.
