Kelaguen Mannok (Chamorro-style Chicken Salad) is a traditional Guam recipe for a classic salad-type dish of barbecued chicken meat blended with spring onions, lemon juice, hot chillies and freshly-grated coconut. Ingredients:
600g cooked chicken (preferably barbecued), chopped
120–180ml lemon juice (5-6 lemons)
35g unsweetened coconut, shredded
8 Thai birds eye chillies, sliced thinly
150g spring onion, chopped
1 small onion, finely chopped
salt, to taste red rice, to accompany
Method:
In a medium bowl, combine the cooked, chopped, chicken, 120ml of lemon juice and coconut.
Stir to combine then add in the chopped spring onion, chillies, and white onion. Stir to combine and taste. Add salt, additional lemon juice or chillies to taste.
Transfer to your refrigerator and chill to allow the flavours to meld whilst your prepare the red rice.
