This is a classic salad of cucumber and onion from the island of Guam marinated in soy sauce and vinegar before serving. It is a classic accompaniment, particularly at fiestas.
Ingredients:
2 large cucumbers
2 tbsp sea salt
1 small onion, sliced thinly
16 garlic cloves, minced
250ml (1 cup) soy sauce
125ml (1/2 cup) white vinegar
Method:
Slice the cucumbers 5-6mm thick then transfer the slices to a non-reactive colander. Sit over a bowl then sprinkle the salt over the cucumbers, stirring well to combine. Set aside for 15 minutes to allow the excess liquid to drain from the cucumbers.
After 15 minutes, empty the bowl, then rinse the excess salt from the cucumbers and set aside in the colander to drain.
Transfer the rinsed and drained cucumbers to a large bowl then mix in the onion, garlic, soy sauce and vinegar. Allow the cucumbers to soak up the flavours for about 10 minutes then serve as an accompaniment.
