Sauce Chien (Dog Sauce) is a traditional Guadeloupe recipe for a classic raw salsa of onion, tomato, shallots, garlic and parsley in a lemon juice, oil and vinegar base that's served with grilled meat, fish and lobster. Ingredients:
3 spring onions, finely sliced
1/4 habanero chilli, very finely chopped
1 tomato, finely diced
1 onion, peeled and finely diced
2 shallots, peeled and finely diced
2 large garlic cloves, peeled and crushed
4 tbsp parsley, finely chopped
4 tbsp chives, finely chopped
4 tbsp lime juice
50ml olive oil
1 tsp vinegar
2 tbsp hot water
fine sea salt and freshly-ground black pepper, to taste
Method:
Combine the spring onions, tomato, onion, shallots, chilli, garlic, parsley and chives in a bowl.
In a separate bowl, whisk together the lime juice, olive oil and vinegar. Add the hot water and whisk to emulsify then season to taste with salt and black pepper.
Pour over the mixed vegetables and toss to coat.
This sauce is typically served with grilled meats, fish and lobster. Though not included in this recipe a dash or two of hot sauce lifts the character of the dog sauce considerably.
