Greenland Reindeer Burgers

These are a relatively new addition to Greenlandic menus, but are fairly ubiquitous in restaurants these days. Typically rye bread buns are used, but you can use brioche buns if you prefer.

Ingredients:

For The Burger Patties:
500g of minced (ground) reindeer meat
1/2 tsp of salt
1/2 tsp of ground black pepper
1 small onion, finely chopped
2 garlic cloves, minced
6 tbsp of butter, for frying

For The Burger Sauce:
60ml of mayonnaise
2 tbsp of crowberry jam
1 tsp of Dijon mustard
Salt and freshly-ground black pepper to taste

For The Toppings
100g of pickled red onions
20g of fresh rocket (or other greens)
8 slices of pickled gherkins, sliced

For The Buns
4 buns, split in half and lightly toasted (rye bread buns would be typical)

Method:

In a large bowl, combine the minced reindeer meat, chopped onion, minced garlic, Dijon mustard, sea salt, and black pepper. Use your hands to mix everything until just combined—don’t overwork the meat, or you’ll end up with tough patties. Divide the mixture into four equal portions and shape them into burger patties about 12mm thick.

Sit the patties on a plate, cover them with plastic wrap, and chill them in the refrigerator for 20–30 minutes. This helps them hold their shape while cooking.

Preheat your frying pan over medium-high heat. Add the butter once the surface is hot, and wait until it's foaming. Cook each patty for about 3–4 minutes per side, spooning over the butter as they cook for extra flavour. Reindeer meat is lean, so watch it closely to avoid overcooking (the melted butter will help keep it moist). You’re aiming for medium done.

While the patties cook, brush the cut sides of the buns with butter and toast them lightly under a grill (broiler) or in a separate frying pan until golden.

Spread a little crowberry jam on the bottom halves of the toasted buns for a sweet tartness that complements the reindeer’s gaminess. Add a few rocket (arugula) leaves, or use lettuce. If desired, add a layer of pickled gherkins (sliced) for extra bite. Spread mayonnaise on the top bun (if you like), and place it over the assembled burger.

Serve these hearty Greenlandic Reindeer Burgers immediately while they’re hot. Pair them with fried potatoes to be authentic, or accompany with a simple side salad.
