Crowberry Jam

Crowberries are one of the common wild fruit in Greenland and though relatively modern in origin, this is a Greenlandic recipe for crowberry jam.

Ingredients:

500g fresh crowberries
400g sugar
2 tbsp lemon juice
splash of water

Method:

Combine the crowberries, sugar, lemon juice and a splash of water in a saucepan or preserving pan. Place over low heat, stirring occasionally until the berries begin to break down and the jam begins to thicken.

Continue simmering until the jam thickens to the required consistency. Ladle into cleaned and sterilized jam jars that have been warmed in an oven.

Secure the lids then set aside to cool before labelling. Store for at least a few weeks before opening. Store in the refrigerator once opened.

Crowberry jam pairs wonderfully with bread or as a topping for various desserts. In Greenland it is also commonly converted into sauces for game meats.
