Green Tomato Mincemeat

This is an unusual mincemeat that makes an excellent basis for a tart.

Ingredients:

1.8kg apples, cored and diced
1.35kg green tomatoes, chopped
650g sugar
450g sultanas
225g currants
120ml vinegar
4 tbsp margarine
1 tbsp cinnamon
1 tbsp grated lemon zest
1 tspb grated orange zest
1 1/2 tsp salt
1 tsp nutmeg
4 cloves

Method:

Add the apples and vinegar to a large saucepan and bring to a boil before adding the tomatoes. Reduce to a simmer and cook until the fruit have softened. Now add all the remaining ingredients, bring to a simmer and cook for about 100 minutes, or until the mixture has thickened.

Pour into jars that have been warmed in an oven heated to 90°C for 10 minutes, seal and store. Allow to mature for at least 6 weeks before using.
