Green Mango Chutney with Cuban Oregano is a traditional Trinidadian recipe for a classic fresh chutney made from a blend of garlic, green mangoes, sugar and green chillies flavoured with culantro, thyme and Cuban oregano. Ingredients:
1 head of garlic, cloves peeled and pureed in a blender
4 green mangoes, peeled, de-seeded and coarsely chopped
1 tbsp caster sugar
pinch of salt
4 tbsp fresh culantro leaves
1 sprig Spanish thyme (Cuban oregano)
1 tsp thyme leaves
2 green chillies
Method:
Combine all the ingredients in a blender or food processor and process until smooth.
Turn into a bowl and serve immediately as an accompaniment or a dip.
