Sauce Gombo (Gombo Sauce) is a traditional Guinean recipe for a classic stew of beef, onions and okra flavoured with pimento (cayenne chillies) that's fried until dry and served with rice. Ingredients:
700g diced okra
2 medium onions, chopped
2 Maggi cubes
400g meat (if desired), thinly sliced
salt and black pepper, to taste pimento, to taste
4 tbsp palm oil
Method:
Fry the meat, onions and pimento in the palm oil for a few minutes. Add the okra and continue cooking for a few minutes before adding sufficient water to double the volume. Season, add the remaining ingredients then continue cooking until all the water has evaporated.
