Gombo et Kissar (Okra Stew with Kissar): A Chadian recipe for a classic dish of meat and onion in an okra base with a hot cilli served accompanied by kissar.
Ingredients:
1kg meat
400g fresh okra, washed
1/4 tsp bicarbonate of soda
3 Maggi cubes
1 onion, peeled and chopped
1 red onion, peeled and chopped
7 garlic cloves, mashed to a paste with a little salt
groundnut oil
salt and freshly-ground black pepper, to taste
ground cumin, to taste
1 hot chilli (Scotch bonnet, typically)
Method:
Heat about 4 tbsp groundnut oil in a pot. Add the onion and fry for about 4 minutes, or until soft. Now add the garlic and stir-fry for 1 minute.
Wash the meat, cut into serving-sized pieces and add to the pot. Fry until the meat is browned then add 500ml water along with the soda and the bicarbonate of soda.
Crumble in the Maggi cubes and season with salt, black pepper and ground cumin, to taste. Bring the mixture to a boil, reduce to a simmer the cover and cook gently for about 60 minutes.
Some 20 minutes before the end of cooking add the while hot chilli.
Serve hot, accompanied by kissar fried as pancakes.
