Sint Eustatian Goat Water is a traditional Sint Eustatian recipe for a classic rich and dark stew of goat meat and vegetables in a tomato and spice base coloured with gravy browning (burnt sugar). Ingredients:
1.8kg bone-in goat meat, cubed
3 limes
3 tbsp pork fat, palm oil, coconut oil, or peanut oil
1.5l Chicken or beef stock
1 tsp salt
1 large onion, diced
1 green bell pepper, diced
3 garlic cloves, finely chopped
6 spring onions, chopped
3 habanero chillies (2 minced and 1 kept whole)
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp ground black pepper
410g tin diced tomatoes
1 1/2 tbsp flour
1 1/2 tbsp cold water
1 tbsp Gravy Browning (or, even better, Caribbean browning sauce)
2 bay leaves
Method:
Take the goat meat then trim away any excess fat. Place in a bowl, cover with water and add the juice of 2 limes or 4 tbsp vinegar. Soak for 5 minutes then drain the goat meat. Take the third lime, halve it and rub all over the goat meat. Set the meat aside to dry.
Place a cast iron casserole (Dutch oven) over medium heat. Add 2 tbsp of your choice of fat or oil and use to brown the goat meat (cook in batches so as not to over-crowd thee pan) until nicely coloured all over. As each batch cooks transfer to a plate or bowl and add the next batch. Return the meat to the pot, cover with lightly-salted water then bring to a boil. Cover the pot with foil then set on the lid and simmer gently for about 90 minutes, or until the goat meat is tender (it should be easy to push in the point of a knife).
Drain the meat and return to the pot along with the stock. Now add in the onion, bell pepper, garlic, spring onions, minced chillies, garlic powder, onion powder, black pepper bay leaves and tomatoes. Fill the empty tin with water and add that too.
In a small bowl whisk 1 1/2 tbsp of water with 1 1/2 tbsp of flour until you have a smooth paste. Add Gravy Browning and mix to combine. When everything is fully incorporated, add to your pan and stir to combine.
Secure the lid on your pan and cook over medium-high heat for 40 minutes.
