Ingredients:
900g goat meat
1 tsp tomato paste
2l water
salt and pepper to taste
3 fresh tomatoes, chopped
2 medium onions, sliced
2 Maggi cubes
6 hot chilli peppers (eg Scotch Bonnet)
Method:
Cut the goat meat into cubes about 5cm square, wash well and season with salt and black pepper. Pound 1/2 onion the chillies and Maggi cubes together in a pestle and mortar and use this to marinate the meat for at least 30 minutes.
Add the water to a pot, bring to a boil then add the meat, onions, tomato paste and fresh tomatoes. Boil for 20 minutes then reduce to a simmer and cook until the meat becomes tender (about 60 minutes). Serve on a bed of rice.
