To make lemon cheeſecakes.


TAKE the peel of two large lemons, boil it very tender, then pound it well in a mortar, with a quarter of a pound or more of loaf ſugar, the yolks of ſix eggs, and half a pound of freſh butter ; pound and mix all well together, lay a puff-paſte in your patty-pans, fill them half full, and bake them. Orange cheeſecakes are done the ſame way, only you boil the peel in two or three waters, to take out the bitterneſs.

Modern Redaction

Ingredients:

pared zest of 2 large lemons
115g coarse sugar
6 egg yolks
225g butter
250g puff pastry (ie, made with 250g flour)

Method:

Bring a pan of water to a boil, add the lemon zest and boil for about 20 minutes, or until very tender. Place in a food processor (or mortar) and combine with the sugar and egg yolks. Pulse until combined then chop the butter, add this to the food processor and process until smooth and creamy.

Prepare your puff pastry according to the recipe, roll out and use to line your patty pan (or pie tin). Pour in the filling (ensuring it's no more than half full) then transfer to an oven pre-heated to 180°C and bake for about 35 minutes, or until the pastry is golden and the cheese filling has set and is golden brown on top. Allow to cool before slicing and serving.
