Ginger Chicken with Toasted Sesame Seeds a Classic Chinese recipe for a dish of chicken marinated in soy sauce stir-fried with vegetables, ginger and white wine.
Ingredients:
500g chicken breasts, skinned and sliced into strips
2 tbsp groundnut oil
1 leek, sliced thinly
1 head of broccoli, cut into small florets
2 carrots, sliced thinly
1/2 cauliflower, cut into small florets
1 tsp fresh ginger, grated
5 tbsp white wine
2 tbsp sesame seeds
1 tbsp cornflour (cornstarch)
1 tbsp water
For the Marinade:
4 tbsp soy sauce
4 tbsp water
Method:
Combine the soy sauce and water in a medium-sized bowl. Add the chicken strips and toss until well coated. Cover the bowl with clingfilm (plastic wrap) and set aside in the refrigerator to marinate for 60 minutes.
After this time, remove the chicken from the marinade with a slotted spoon. Heat the oil in a wok and use to stir-fry the chicken and leek until the chicken is browned all over and the leek is beginning to soften. At this point stir in the vegetables along with the ginger and rice wine. Reduce the heat, cover the pan and simmer for 5 minutes.
In the meantime, scatter the sesame seeds on a baking tray and place under a hot grill. Stir them occasionally to ensure they toast evenly and cook until lightly browned (do not colour them too much or they will turn bitter).
Whisk the cornflour with 1 tbsp water to a smooth paste. Gradually add this mixture to the work, stirring constantly and cooking until the sauce has thickened.
Serve the stir-fry hot on a bed of freshly-cooked rice. Garnish with the toasted sesame seeds and serve.
