These are small light and crispy pancakes typically served during tea or coffee breaks, particularly around mid-day. But they work just as well for a light breakfast. What's more, they're oven baked rather than being fried in a pan.

Ingredients:

200g Flour T45
200g Caster sugar
180g Soft butter
1 Egg white
1 sachet (8g) Vanilla sugar
pinch of Salt

Method:

Pre-heat your oven to 200°C (Gas Mark 6-7).

Cream together the softened butter in a bowl with the sugar and salt. Sift over the flour and mix well to combine. Add the egg white amd mix to combine.

Line a baking tray with baking parchment, then arrange several small mounds of the dough on this. Spread these into strips of 5 x 15cm. Transfer the baking tray to the centre of the oven and bake for 5 minutes.

As soon as the crêpes are golden brown, remove the tray from the oven and immediately wrap the lace crêpes around the blade of a metal spatula. Transfer to a rack to cool and harden then serve.

These can be served as is with tea or coffee or they can be served with a scoop of ice cream.
