Gari Foto (Savoury Gari with Eggs) is most commonly associated with Ghana, but the dish is also prepared in Benin, and the recipe given here is the Beninese form of the dish.
Ingredients:
6 eggs
2 onions
150g tomatoes, blanched and peeled
150g tomato purée
300g gari (fermented and dried cassava meal)
oil for frying
salt and freshly-ground black pepper, to taste
Method:
Beat 4 of the eggs in a bowl. Season to taste, then fry to form an omelette. Set aside to keep warm.
Heat a little oil in a pan, add the tomato pieces and fry along with the onions and tomato purée for 3 minutes. Beat 2 eggs in a bowl and stir into the fried mixture.
Moisten the gari with 150ml water, stirring vigorously. Pour the tomato sauce over the moistened gari and stir to mix.
Serve accompanied by the sliced omelette.
