Gari aux Crevettes (Gari with Prawns) is a traditional Cameroonian recipe for a classic dish of gari (cassava flour) and prawns (shrimps) cooked in a tomato base with hot chilli powder. Pour the gari into a bowl, add 400ml water, stir and set aside to soak for a few minutes.
Heat the oil in a pan, add the onions and fry for 4 minutes then add the tomatoes and fry for about 5 minutes more. Stir the gari and the prawns into the pan then add a ladleful of boiling water.
Season to taste with salt and hot chilli powder. Cook, stirring constantly, until the mixture thickens and the gari becomes golden brown.
