Gari aux Crevettes (Gari with Prawns)

Gari aux Crevettes (Gari with Prawns) is a traditional Cameroonian recipe for a classic dish of gari (cassava flour) and prawns (shrimps) cooked in a tomato base with hot chilli powder. Ingredients:

150g gari (cassava flour)
100g peeled prawns
500g fresh tomatoes, chopped
2 onions, chopped
4 tbsp soya oil
chilli powder, to taste
salt, to taste

Method:

Pour the gari into a bowl, add 400ml water, stir and set aside to soak for a few minutes.

Heat the oil in a pan, add the onions and fry for 4 minutes then add the tomatoes and fry for about 5 minutes more. Stir the gari and the prawns into the pan then add a ladleful of boiling water.

Season to taste with salt and hot chilli powder. Cook, stirring constantly, until the mixture thickens and the gari becomes golden brown.

Take off the heat, set aside to cool and serve.
