Barbecued Fish

Like most of French Polynesia, fish and seafood are an important part of the cuisine of the Gambier Islands (both native and French-influenced). Whilst pit roasting was the traditional method of cooking pretty much everything (you could cook your meat, breadfruit and taro all in one go). Barbecue is also an important cooking technique and this is a simple recipe for barbecued fish.

Ingredients:

8 medium-sized fish (chose your favourites)
juice of 2 lemons
salt flakes, to taste
4 tbsp mixed herbs (eg coriander, mint, lemongrass)
freshly-ground black pepper, to taste
oil for brushing

Method:

Pre-heat your barbecue before starting work on the fish.

Clean, gut and scale the fish then rub with oil and drizzle over the lime juice.

Chop the herbs and mix with the salt then rub over the inside and outside of the fish.

Arrange the fish on your barbecue and cook for about 10 minutes per side, until charred in places and cooked through.

Serve hot, accompanied by breadfruit.
