Galifoto

This is a classic vegetarian dish of gari and egg omelette.
Ingredients:
6 eggs, beaten
350g gari (cassava semolina)
1 onion
oil for frying
salt, to taste
Method:
Place the gari in a bowl and moisten with 60ml water season to taste with salt and stir to combine.
Heat the oil in a frying pan and use to fry the onion for about 6 minutes, or until lightly coloured. Add the eggs and beat with a fork then beat in the gari.
Cook until the omelette is heated through. If you like your omelette browned on top, place under a hot grill for a few minutes before serving.
