Futali is a traditional Malawian recipe for a classic vegetarian stew of pumpkin cooked in water and thickened with peanut flour. The full recipe is presented here and I hope you enjoy this classic Malawian version of: Futali.

Ingredients:
1 small pumpkin (or squash or white sweet potato or cassava or plantains)
300g peanut flour
700ml water
salt, to taste
Method:
Cut the vegetables into large cubes and add to the salted water. Bring to a boil and cook until just tender. Add the peanut flour and allow to simmer for 10 minutes.
Serve with rice or Nsima or by itself as a breakfast dish.
