Breadfruit is a staple on the islands of the Federated States of Micronesia, just as it is on many Polynesian islands. Here a breadfruit is sliced thinly before being fried to yield breadfruit chips (crisps).
Ingredients:
1 medium-sized just ripe breadfruit
Salt, to taste
Vegetable oil for frying
Method:
Select a ripe breadfruit, picking one that is firm and without any soft spots or bruises. Wash the breadfruit thoroughly under running water to remove any dirt or debris.
Peel the breadfruit using a sharp knife or vegetable peeler. Cut off the top and bottom of the breadfruit, then slice the peel off in sections, working your way around the fruit until it is completely peeled.
Slice the peeled breadfruit thinly using a mandoline or a sharp knife. Aim for slices that are about 3mm to 6mm inch thick. Thinner slices will result in crispier chips.
Place the sliced breadfruit in a large bowl of cold water. Let it soak for about 10-15 minutes. This helps to remove excess starch from the slices and prevents them from blackening.
Drain the sliced breadfruit and pat them dry using a clean kitchen towel or paper towels.
Heat vegetable oil in a deep fryer, wok or deep pan or pot over medium-high heat. The oil should be hot enough to fry the breadfruit but not smoking (about 180C).
Carefully add the breadfruit slices to the hot oil, cooking in batches, making sure not to over-crowd the pan. Fry the slices for about 3-4 minutes per side, or until they are golden brown and crispy.
Use a slotted spoon or spider to transfer the fried breadfruit chips to a plate lined with paper towels to drain any excess oil.
While the chips are still hot, sprinkle them with salt to taste.
Allow the breadfruit chips to cool slightly before serving.
Enjoy them as a snack on their own or alongside your favourite dips or sauces.
