Fruity Duck: Classic British recipe for a barbecue dish of duck breasts stuffed with apricots and shallots that are brushed with honey and sesame oil before cooking shown garnished with a spring onion flower.
Ingredients:
4 duck breasts
115g ready to eat apricots
2 shallots, thinly sliced
2 tbsp clear honey
1 tsp sesame oil
2 tsp Chinese five-spice power
4 spring onions, to garnish
Method:
Using a sharp knife, cut a long slit in the fleshy side of each duck breast to form a pocket. Divide the apricots and shallots between these pockets and secure in place with skewers.
In a small bowl, mix together the honey and sesame oil. Brush this all over the duck then sprinkle over the five-spice powder.
For the garnish, make a few cuts lengthways down the stem of each spring onion. Place in a bowl of ice-cold water and leave until the tassels open out (at least 30 minutes). Drain thoroughly before use.
To cook the duck, place on a barbecue over medium-hot coals and cook for between 6 to 8 minutes per side.
Remove the skewers, transfer the meat to a large serving plate and garnish with the spring onion tassels.
