These French delicacies are traditionally baked in canoe-shaped or madeleine moulds. Here, they’re adapted for mini muffin tins (patty pans) to be made into New Year delights to be served as an accompaniment to the toasting champagne.
Ingredients:
120g (1 cup) ground almonds (almond meal)
90g (1/2 cup + 2tbp) plain (all-purpose) flour
6 eggs (whites only)
180g (1 cup) granulated sugar
1 tbsp honey (at room temperature)
80g (1/3 cup + 1 tbsp) unsalted butter, melted in the microwave and cooled
Icing (confectioner’s or powdered) sugar, for dusting
Method:
Mix together the ground almonds and flour in a small bowl.
Add the egg whites to a clean and dry bowl and beat until foamy. Whilst beating constantly add the sugar in a slow, steady, stream (about 6 minutes) and continue beating until glossy and moist and the egg whites form soft peaks (about 1 minute more).
Using 3-4 additions, sift the flour and almond mixture over the egg whites folding gently with a metal spoon before the next addition. Next fold in the honey, followed by the cold, melted, butter. Cover with clingfilm (plastic wrap) and set aside to rest at room temperature fr 30 minutes.
Brush the wells of mini-muffin or patty pan tins with melted butter. Sift over plain (all-purpose flour) to coat then invert and shake out any excess. Gently spoon in the batter, filling the wells no more than ¾ full.
Transfer to the centre of an oven pre-heated to 200ºC (400ºF) and bake for between 8 and 10 minutes, or until golden brown. Allow to cool in the tins for 5 minutes, then carefully invert onto a wire rack. Dust the tops with icing sugar and allow to cool completely before serving.
These cakes are best served on the day they are baked, but can be stored in an air-tight container for 2 to 3 days and then refreshed by heating in a microwave for 20 seconds before serving.
