Firi firi is a Tahitian fried dough infused with coconut milk. It is a typical breakfast meal in French Polynesia. The dough is typically made with flour, sugar, coconut milk, yeast, water, and a pinch of salt, and then pieces of it are deep-fried in hot oil until nicely coloured and crispy.

This delicious Tahitian coconut doughnut traditionally served for breakfast and for dessert.

Ingredients:

350g plain (all purpose) flour
100g sugar
pinch salt
2 1/2 tsp dry yeast
80 ml water
200ml coconut milk (lukewarm)
Vegetable oil for deep frying
powdered sugar, for coating

Method:

Dissolve the yeast and 1 tbsp sugar in the lukewarm water. Mix well to combine then set aside for about 10 minutes until the yeast is active and the mixture is frothy.

Combine all the ingredients (including the yeast mixture) in the bowl of an electric mixer fitted with the whisk attachment and whisk well. Mix until you attain a thick and smooth batter (you can also do this mixing by hand).

Cover the bowl and set aside in a warm place to prove for 3 hours.

After this time, pour the batter into a piping bag (or plastic bag) and cut a 5cm hole in one corner (or use a 5cm round tip).

Heat the vegetable oil until it reaches 170°C.

Pipe the batter into the hot oil cutting the yeasted dough pieces when they get to about 15cm in length.

Fry them on both sides until golden brown (they need to be more brown than golden!). Drain on kitchen paper then roll in powdered sugar and serve hot.
