Franks Red Hot Sauce
Franks Red Hot Sauce is a traditional American recipe for a classic hot sauce that is a copycat of the basic sauce used in the Harvester Red Devil sauce and is a blend of jalapeño chillies, onions, tomatoes, Worcestershire sauce and sugar. This is a copycat recipe of the famous 'Franks Red Hot Sauce' which is the basis of the famous Harvester Red Devil Sauce.
Ingredients:
16 jalapeño chilli peppers
4 onions, finely chopped
4 ripe red tomatoes
1 tsp Worcestershire sauce
pinch of brown sugar
salt and black pepper, to taste
Method:
Chop the chillies very finely. Blanch the tomatoes, peel and then chop very finely. Add all the ingredients to a saucepan. Add just enough water to cover then bring to a boil and reduce to a low simmer. Cover and cook until all the ingredients are tender (about 25 minutes). Allow to cool a little then transfer to a blender and purée until smooth. Don't skimp on the Worcestershire sauce as this is what gives the sauce it's 'moreish' qualities. Season to taste and serve cold.
It's the umami in the Worcestershire sauce that gives the sauce this quality. You can add more of this by using anchovy essence rather than the Worcestershire sauce.
