Frango com Piri-piri (Piri-piri Chicken) is a traditional Mozambican recipe for a classic dish of spatchcocked chicken with a garlic, chilli and coconut milk marinade that's cooked on a barbecue whilst being basted with the left-over marinade. Frango com Piri-piri (Piri-piri Chicken): A Mozambican recipe for a dish of spatchcocked chicken with a garlic, chilli and coconut milk marinade that's cooked on a barbecue whilst being basted with the left-over marinade.
Ingredients:
2 large spatchcocked chickens (opened down the back and opened out flat)
8 garlic cloves, crushed
1 tsp ground piri-piri chillies (or cayenne pepper)
65ml
piri-piri oil
400ml coconut milk
juice of 2 large lemons
1 tsp freshly-ground black pepper
Method:
Wash the chicken and pat dry with kitchen paper.
In a bowl, mix together the garlic, ground chillies, coconut milk, piri-piri oil and lemon juice then season with the black pepper. Place the chicken in a shallow dish and pour over the coconut marinade. Turn the chicken several times to ensure it's evenly coated in the marinade.
Set aside in the refrigerator to marinate over night (turn the chicken from time to time to ensure even marinating). Remove the chicken from the marinade (reserve any leftover marinade) and sit on the oiled rack of a barbecue over medium-hot coals.
Cook for 90 minutes, turning frequently and basting with the marinade as the chicken cooks.
