Fisksoppa (Swedish Fish Soup) a Classic Swedish recipe for a soup of fish fillet pieces in a tomato, cream, onion and dill base.

Ingredients:

400g fish fillets (cod or salmon)
150g leeks, shredded
1 yellow onion, peeled and chopped
3 tbsp butter
pinch of freshly-ground black pepper
800g (2 tins) chopped tomatoes
250ml water
600ml single cream
2 vegetable stock cubes, crumbled
pinch of sugar
1/2 tsp salt
250ml dill, chopped


Method:

Cut the fish into bite-sized pieces.

Melt the butter in a pan, add the leeks and onion and fry for about 4 minutes, or until soft but not coloured.

Stir in the black pepper, tomatoes, cream and vegetable stock cubes. Cook for a few minutes, or until the tomatoes begin to break down and add the fish.

Bring the soup to a simmer and cook for about 3 minutes, or until the fish pieces are tender.

Season with sugar and salt, sprinkle over the dill and serve.
