Fiskgryta med citron och gräslök (Fish Stew with Lemon and Chives) a Classic Swedish recipe for a stew of fish in a cream base favoured with lemon and finished with tomatoes and chives that is traditionally served with pepper rice.
Ingredients:
400g cod fillets
250ml single cream
finely-grated zest of 1/2 lemon
juice of 1/2 lemon
1 fish stock cube
1/2 tsp salt
1 tsp coarsely-ground white pepper
2 tomatoes
2 tbsp chives, chopped
For the Pepper Rice (Paprikaris):
400g cooked rice
2 yellow bell peppers
Method:
Cut the fish into pieces. Combine the cream, lemon juice, lemon zest and stock cube in a saucepan. Bring to a boil then add the fish and season to taste with salt and black pepper.
Cook over low heat for about 8 minutes, or until the fish is white and firm. Slice the tomatoes and add to the pan. Sprinkle over the chives and bring to a boil. Take off the heat.
Dice the yellow bell peppers and stir into the hot rice. Serve the fish stew accompanied by the pepper rice and by a generous piece of crusty bread
