Fisk på grönsakspytt (Ham Cakes) a Classic Swedish recipe for a dish of cod fillets cooked on a savory mixed vegetable hash in a cream base.

Ingredients:

600g cod fillets
pinch of ground white pepper
2 bell peppers, de-seeded and diced
300g butternut squash, diced
500ml whipping cream
1 leek (white part only), finely shredded
15g butter
1 tbsp plain flour
1 tsp salt
1 tsp thyme
1 tbsp white wine vinegar

Method:

Heat the butter in a pan, add the bell peppers, squash and leek and fry for a few minutes.

Scatter over the flour and stir to blend then season with salt and thyme. Pour in the vinegar and the cream. Bring to a simmer and gently nestle in the fish. Adjust the seasonings to taste.

Cover and simmer gently for about 6 minutes, or until the fish is tender.

Garnish with sprigs of thyme and serve hot with boiled potatoes.
