Fisk och paprikasoppa (Fish and Bell Pepper Soup) a Classic Swedish recipe for a soup of fish and bell peppers in a milk, sour cream and white wine base that is often enriched with prawns to be served at Christmas or New Year.

Ingredients:

400g fish fillet
1 red bell pepper
1 yellow bell pepper
1 green bell pepper
3 garlic cloves
3 tbsp butter
1.5l milk
600ml sour cream
250ml white wine
2 fish stock cubes
1 tsp fresh thyme, finely chopped
salt and cayenne pepper, to taste

Method:

Cut the fish into pieces. De-seed the bell peppers and cut into pieces. Peel and chop the garlic.

Melt the butter in a pan, add the bell peppers and garlic and fry for about 3 minutes, or until softened. Stir in the milk, cream, white wine, stock cubes and thyme. Bring just to a boil, then add the fish. Continue boiling for about 4 minutes, or until the fish is cooked.

Season to taste with salt and cayenne pepper. Serve hot, accompanied by bread, grated cheese and fresh lemon thyme.

For Christmas and New Year, the soup is made richer by the inclusion of 100g peeled prawns, added just before serving.
