Ingredients:

750g firm white fish fillets (cod, plaice, haddock etc)
Plain flour to dust
60g butter
3 tbsp olive oil
180ml orange juice
finely-grated zest of 1 orange
1/2 tsp crushed caraway seeds
120ml fish stock or vegetable stock
pinch of sugar
salt and pepper

Method:

Dust the fish fillets with seasoned flour. Add the butter and oil to a frying pan and heat. Once hot add the fish fillets and cook on medium heat for 2–3 minutes a side until the fish begins to separate into flakes. Remove from the pan at this stage and set aside in the oven to keep warm.

Add the orange juice, orange zest, caraway seeds and stock to the pan juices. Simmer gently until the sauce reduces and thickens slightly. Add a little sugar if the sauce is too tart.

Transfer the fish fillets to a serving dish, pour the sauce over them and serve. This is excellent with new potatoes or mashed potatoes.
