Fish Kebabs: A classic British dish of mixed fish and seafood with vegetables cooked on a barbecue.

Ingredients


24 raw tiger prawns
8 scallops
250g monkfish tail
1 bulb of fennel, chopped into chunky bite-sized pieces
16 cherry tomatoes
1 onion, quartered
1 tbsp oil
2 tsp herbes de Provence
salt, to taste

Method:

Soak 8 wooden or bamboo kebab skewers in a large bowl of water for at least 15 minutes.

Wash the monkfish tail and cut into large chunks.

Pre-heat your barbecue and wait until the coals are covered with a layer of white ash.

Thread the fish, seafood and vegetables alternately onto the soaked skewers. Brush with oil, season with salt and sprinkle over the dried herbs.

Place on your barbecue and cook for about 15 minutes, turning frequently, or until done through.

Serve immediately.
