"Fish Creole: An American recipe for a dish of baked fish and prawns in a herbed tomato-based sauce.
Ingredients:
175g cod fillets
100g peeled prawns
25g butter
1 onion, chopped
2 celery sticks, chopped
1 garlic clove, crushed
1 tsp green peppercorns, chopped
400g can of tomatoes
2 tablespoons muscovado sugar
1/2 teaspoon chopped thyme
1 tablespoon red wine vinegar
1 tablespoon Worcestershire sauce
salt and freshly-ground black pepper, to taste
lemon slices to garnish
Method:
Preheat the oven to 180°C (350°F/Gas Mark 4), then wash and rinse the cod, arrange in a lightly-oiled oven-proof tin, along with the prawns.
Melt the butter in the pan and lightly sauté the onion, celery, garlic and green bell pepper until they are tender. Add the tomatoes and stir-in the remaining ingredients before pouring over the fish.
Bake in the oven for 25–30 minutes and serve garnished with lemon slices to accompany fries or saffron rice.
