Coconut biscuits are a delicious and easy-to-make treat that are perfect for any occasion. These biscuits are sweet, chewy, and packed with coconut flavour. These are prepared in the Philippines and in Macau.
In a medium-sized mixing bowl, combine coconut flakes, sugar, flour, melted butter, egg yolks, and whole egg, blending until the ingredients hold together.
Using wet hands, roll the dough into walnut-sized balls and place them on baking trays lined with parchment paper.
Transfer to the centre of your pre-heated oven and bake until the tops turn golden (approximately 15 minutes).
Variations:
You can add chocolate chips or chopped nuts for extra flavour and texture. If desired, drizzle melted chocolate over the cooled biscuits for a decadent touch. Use vanilla extract, almond extract or orange flower water for different flavour profiles.
