Ingredients:

450g veal cutlets
225g salted cottage cheese (or Feta cheese)
1 tbsp plain flour
115g butter
3 tbsp extra-virgin olive oil
1 onion, finely diced
salt, black pepper and cayenne pepper, to taste

Method:

Cut the veal into small cubes then add the oil to a small pan and use to fry the meat and onion for about 12 minutes, or until the onion is soft and lightly golden.

Meanwhile, melt the butter in a separate pan then scatter the flour over the top and stir into the butter until a smooth roux is formed. Cook, stirring continuously, until lightly browned, then add the cheese and season with salt, black pepper and cayenne pepper. Turn the meat and onions into this mixture and stir to combine.

Take the mixture off the heat then turn into a greased baking dish and place in an oven pre-heated to 180°C and bake for 15 minutes. Serve immediately with fried potatoes.
