This is an unusual but traditional dish from Brittany for pancake batter cooked like scrambled eggs! The Breton style is to eat them as is, but you can eat with any topping you like: chocolate, sugar, spread, fruit, caramel...

Ingredients:

250g of flour
50 g of powdered sugar
400ml of milk
2 eggs

Method:

Combine the flour and sugar in a large mixing bowl. Use a whisk to combine then, still beating with the whisk add in the milk a little at a time. Crack in the eggs then continue whisking until you have a smooth batter.

Place a pan over medium-high heat. When hot add a knob of butter. As soon as the butter is foaming add 2 ladles of the batter. Allow the batter to set for a few seconds then stir with a spatula, just as if you were making scrambled eggs.

Add a few pieces of butter and sprinkle with sugar then continue stirring, breaking up any large dough pieces. Allow the ingredients to brown then tip out onto a plate and garnish with fruit or other ingredients.

Repeat the process until all the batter has been cooked. Serve warm.
