Fänkålssoppa med strimlad lax (Fennel Soup with Smoked Salmon Shreds) a classic Swedish recipe for a soup of smoked salmon in an onion, fennel, white wine, cream and chicken bouillon base.

Ingredients:

2 yellow onions, peeled and chopped
5 fennel bulbs (about 1kg), coarsely sliced into pieces
2 tbsp butter
1l water
200ml white wine
3 chicken bouillon cubes
100ml crème fraîche
250ml double cream
freshly-ground black pepper, to taste
400g smoked salmon, shredded, to garnish
4 tbsp fresh chives, snipped, to garnish


Method:

Melt the butter in a pan, add the onions and fennel and fry gently for about 5 minutes. Add the water and the wine then crumble over and stir in the stock cubes.

Bring to a boil and cook for about 15 minutes, or until the fennel pieces are soft. Process the soup until smooth either in a food processor, or using a stick blender.

Stir in the sour cream and the cream and allow to heat through. Season with black pepper.

Ladle into warmed soup bowls, garnish with the smoked salmon and the chopped chives then serve.
