Fa'apapa (Samoan Coconut Bread) is a traditional Samoan recipe for a classic loaf-like cake made from a flour, sugar, coconut flake and coconut milk batter. The full recipe is presented here and I hope you enjoy this classic Samoan version of: Samoan Coconut Bread (Fa'apapa).
Combine the flour, sugar, coconut flakes and baking powder in a bowl. Pour in the coconut milk and stir to form a sticky dough.
Scrape the mixture onto a floured work surface. Lightly dust your hands with flour and split the dough in half. Shape both of the pieces into 4 cm-thick rectangles.
When finished, arrange these in the centre of two large sheets of greased baking paper. Now, take the paper and fold it into a parcel to completely enclose the dough. Remember to fold the ends to completely secure the dough.
Transfer the parcels to a large baking tray then place in the centre of your pre-heated oven. Bake for about 35 minutes, or until the breads/cakes are golden brown in colour and are cooked through.
Once baked, set aside to cool for a while then slice into and serve.
Note that commercial coconut flakes are typically sweetened. I usually use grated fresh coconut blended with a little warmed honey.
