Empanadas Dulces (Sweet Pies) a Classic Colombian recipe for a snack or dessert of what pastry rounds filled with a sweetened apple and raisin mix that are shaped into half-moons and deep fried to cook.
Ingredients:
For the Pastry:
300g wheat flour
1 tsp baking powder
30g butter
3 tbsp oil
1 egg
250ml water
For the Filling:
1 green apple, cored and chopped
2 tbsp butter
2 tbsp brown sugar
2 tbsp lemon juice
60g raisins
ground cinnamon, to taste
oil for deep frying
Method:
Combine all the ingredients for the filling in a pan. Heat gently for about 15 minutes, or until the apple breaks down to a slurry. Take off the heat and set aside.
Combine the water, butter and oil for the pastry in a small pan. Heat gently until boiling then take off the heat and work in the flour and baking powder until smooth. Add the egg and form the flour mix into a dough.
Turn the resultant dough onto a floured work surface and knead gently until elastic. Cover with a damp cloth and set aside to rest for 60 minutes.
After this time, roll the dough out then cut into circles about 6cm in diameter.
Place a small amount of the filling in the centre of each circle of dough. Fold the dough over into a half moon and crimp the edges with your thumb and forefinger.
Heat oil in a deep fryer to 180°C. When hot add the sweet empanadas, in batches, frying until golden brown and heated through.
Drain on kitchen paper, dust with sugar and serve slightly warm.
