Empadãi de Queijo (Cheese Pie) a Classic Brazilian recipe for a pie made with shortcrust pastry base filled with a cheese, egg and milk blend that's oven baked to cook.

Ingredients:

For the Pastry:
280g plain flour
100g cold butter
2 tbsp oil
pinch of salt

For the Filling:
400g cheese (prato, minas, parmesan, mozzarella), grated
3 eggs
150ml milk
1 tsp baking powder
salt, freshly-ground black pepper and paprika, to taste

Method:

For the pastry, sift the flour into a bowl. Add the oil and salt and stir to combine. Dice the butter and add to the flour, rubbing in with your fingertips until the mixture comes together as a dough (if it's too dry add a little cold water to blend).

Take the dough and roll out until large enough to cover the base and sides of a rectangular baking dish.

Combine all the filling ingredients in a blender and pulse to mix. Pour over the pastry then trim the pastry edges neatly.

Transfer to an oven pre-heated to 160°C and bake for 40 minutes, or until the filling is set and golden brown. Remove from the oven and allow to cool for 5 minutes before slicing into wedges and serving.
