This is a classic Chinese recipe for a breakfast dish or snack of bean sprouts, mushrooms and crab meat flavoured with curry powder in which eggs are cooked.
Ingredients:
75g oil or butter
50g beansprouts
100g mushrooms, sliced
pinch of
curry powder
100g crab meat
2 eggs
Method:
Melt the butter in a small pan and use to fry the mushrooms, beansprouts and crab meat for about 6 minutes, or until the mushrooms are cooked through. Add the curry powder and stir to combine then form two small depressions in the mixture and crack in the eggs.
Continue cooking (do not stir) until the egg whites are set and the yolks are heated through. Serve hot.
