Egg Fu Yung a Classic Chinese recipe for a vegetarian stir-fry of an egg omelette blended with garlic, onion, bell pepper, rice and beansprouts.

Ingredients:

2 eggs
1/2 tsp salt
pinch of ground white pepper
1 tbsp melted butter
2 tbsp groundnut oil or vegetable oil
1 tbsp garlic, finely chopped
1 small onion, thinly sliced
1 green bell pepper, sliced thinly
450g cooked rice, chilled beforehand
1 tbsp light soy sauce
1 tbsp spring onions, finely chopped
150g beansprouts, trimmed
2 drops of sesame oil

Method:

Beat together the eggs, salt and white pepper in a bowl.

Heat the butter in a frying pan then pour in the egg mixture and cook as an omelette, until set.

Carefully turn out onto a chopping block and cut into thin slivers.

Place a wok over high heat and when hot add the oil and use to stir-fry the garlic until fragrant. Add the onion and stir-fry for 1 minute more then add the bell pepper and stir-fry for 1 minute more.

Stir in the rice and cook until the grains separate. At this point add the soy sauce and stir-fry for 1 minute.

Now add the spring onions and the egg strips, stirring well to combine. Finally add the beansprouts and the sesame oil.

Stir-fry the mixture for 1 minute more, then serve immediately.
