Place a wok over medium heat. When hot add a little oil and use to stir-fry the garlic and onion for about 3 minutes, until soft. Now add in birds' eye chillies, followed by anchovies.
As soon as those ingredients look well-fried, add in the durians. Add some sugar and salt according to your taste (or how long you want to preserve it) and cook until the fruit breaks down and you have a smooth paste.
Transfer to a bowl, cover with a cloth and set aside for 3 days to ferment. After this time, transfer into jars and store in the refrigerator.
