Ingredients:
200g onions, finely chopped
200g tomatoes, cut into small dice
1 tsp salt
1 tsp curry powder
1/2 tsp chilli flakes
4 tbsp oil
2.5kg duckling cut into 12 pieces
2l water
6 slightly green plantains, sliced
Method:
Fry the onions, tomatoes, salt, curry powder and chilli flakes in the oil until the onions are soft then add the duckling pieces and fry for 3 minutes, or until the duckling begins to brown. Add the water, cover and simmer for 30 minutes until the duckling is soft. Add the plantains and simmer for 20 additional minutes. Serve on a large platter.
