This is a classic recipe for a dry baking mix that can be made in advance, will store for a month and which can be used as the base for a range of recipes.
Combine the milk powder, baking powder, sugar, salt and flour in a large bowl and stir to combine thoroughly. Cube the shortening then cut into the dry ingredients with two knives until the mixture resembles fine cornmeal.
Transfer the mixture to a tightly-lidded glass or plastic container and store in the refrigerator. Typically it will keep for up to a month.
